Corazón de mi negra® chooses the best agaves for its production. During this process, the ripe agaves are used in order to ensure a good quality of sugars. The varieties and species of agave that we choose vary from one region to another and this influences the quality of the mezcal, which is why we choose the highest quality ones to give you an unforgettable experience on your palate.
Cooking is carried out to achieve proper fermentation. This operation is carried out in an oven built from a hole dug in the ground. The baking process can last from 3 to 5 days depending on the surrounding weather conditions.
In the grinding process, the juices and sugars are squeezed out of the cooked agave to proceed to its fermentation.

Cooking is carried out to achieve proper fermentation. This operation is carried out in an oven built from a hole dug in the ground. The baking process can last from 3 to 5 days depending on the surrounding weather conditions.
In this operation, the separation of alcohol from water is carried out, taking advantage of their different boiling points. Ethanol, due to its molecular structure, has a lower boiling point than water (78.5o C at sea level), therefore, it separates from it when it reaches this temperature. The device used for distillation is the copper alembic. This equipment is made up of four elements made of copper due to
its high thermal conductivity, in such a way that it facilitates heat transfer by heating and cooling easily, thus reaching the appropriate separation temperature.
